Kaiserschmarren with cranberries

Ingredients

  • 6 Eggs (Gr. M)
  • 750 ml Milk
  • 3 TABLESPOONS Sugar
  • 1 pinch Salt
  • 225 g Flour
  • 1 glass (370 ml) Wild cranberries in juice
  • 1 coated Tsp Cornstarch
  • 3 TABLESPOONS Raisins
  • 3-4 tablespoons (45 g) butter/margarine
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Mint

Directions

    Separate eggs. Beat milk, egg yolk, sugar and salt until frothy. Add flour little by little and mix everything to a smooth dough. Leave to swell for about 30 minutes

    Boil up the cranberries with the juice. Stir starch and 1 tablespoon of water until smooth. Bind the cranberries with it. Let cool off

    Beat the egg whites until stiff and fold into the dough with raisins. Fry 1/3-1/4 of each dough in a portion of hot fat in a pan on both sides until golden brown. Pluck into bite-sized pieces with 2 forks. Continue frying for about 2 minutes.

    Arrange everything and dust with icing sugar. Decorate with mint if desired.
