Ingredients

Servings: 1
  • 500 ml Lemon Buttermilk
  • 2 Eggs
  • 250 g Sugar
  • 1 1/2 pck. Baking Powder
  • 400 g Flour
  • 7-10 Tbsp 2 x 300 g tins of mandarins
  • 200 g Coconut shavings
  • 150 g Sugar
  • 25 g Flour
  • 400 ml Whipped cream

Directions

  1. 1

Preheat the oven to 180°C. Beat the buttermilk together with the eggs and sugar until creamy. Mix the flour with the baking powder and also mix in with the hand mixer.

  2. 2

Line a baking tray with baking paper and pour the dough on top. Pour the mandarins over a sieve and spread them on the dough. Mix the coconut flakes with the sugar and flour and pour over the cake.

  3. 3

Bake in a preheated oven for about 30 minutes.

  4. 4

Now pour the liquid cream onto the still hot cake. If you want it not quite as juicy and less calorific, you can also use only 200 ml of cream.
