Juicy apple-walnut wreath (diabetics)

Ingredients

  • 75 g Walnut kernels
  • 200 g cleaned apples
  • 1-2 TABLESPOONS Lemon juice
  • 200 g Butter or margarine
  • 75 g Diabetic sweetness
  • 4 Eggs (size M)
  • 300 g Flour
  • 2 TABLESPOONS Milk
  • 7-10 Tbsp grated rind of 1/2 untreated lemon
  • 1/3 Bottle of butter-vanilla flavor
  • 2 slightly heaped Tsp baking powder
  • 7-10 Tbsp Fat and breadcrumbs

Directions

    Coarsely chop the walnuts. Cut apples into quarters or eighths, cut them into thin slices and sprinkle with lemon juice. Cream soft fat and diabetic sweetener. Alternately stir in eggs and approx. 3 tablespoons of flour. Add milk, lemon zest and butter-vanilla flavouring. Mix remaining flour and baking powder and stir in briefly.

    Fold 3/4 of the apples and nuts into the dough. Pour into a greased springform pan (22 cm Ø/ just under 1 3/4 litre capacity)) with a tube bottom insert and smooth it down. Sprinkle the remaining apples and nuts on the dough and bake in a preheated oven (electric range: 175 °C/ gas: level 2) for 40-45 minutes. Let the finished cake rest in the pan for approx. 20 minutes. Then turn out of the tin and let it cool down on a cake rack. Results in approx. 20 slices
