Mix 700 g flour, baking powder and sugar in a mixing bowl. Add butter in flakes and eggs. Knead everything with the kneading hooks of the hand mixer. Then knead the dough briefly with your hands to a smooth dough.
Divide the dough into 4 portions and form each into a roll (approx. 4 cm Ø). Cut each roll into 10 pieces and form them into balls with well floured hands. Put them on a baking tray lined with baking paper, cover and let them rest for about 2 hours.
Then press each ball of dough into a rectangle (approx. 5 x 10 cm) on a well floured work surface with floured hands or roll it out with a dough roller. Cut the rectangles in the middle lengthwise approx. 7 cm and pull a narrow end of dough through the slit.
Heat the oil in a deep fryer or a wide pot to 175°C. Fry 4-5 doughnuts in each portion for about 3 minutes on both sides until golden brown. Lift them out and let them drip off well on kitchen paper.
Dust Jersey wonders with icing sugar.
