Italian bean salad

Ingredients

  • 500 g Cut and wax beans
  • 125 g Mozzarella
  • 150 g Italian mortadella
  • 300 g small tomatoes
  • 1 collar Spring onions
  • 1 bunch of parsley
  • 7-8 TABLESPOONS white balsamic vinegar
  • 1-2 TABLESPOONS coarse mustard
  • 7-10 Tbsp salt and pepper
  • 7-10 Tbsp Sugar
  • 4 TABLESPOONS Oil

Directions

    Wash and clean the beans. Cut the beans into pieces. Halve or cut wax beans in half or in thirds. Cook all in boiling salted water for about 10 minutes. Then rinse with cold water, drain and let them cool down.

    Dice mozzarella. Pluck or cut mortadella into bite-sized pieces. Wash and quarter the tomatoes. Clean and wash spring onions and cut into fine rings. Wash parsley, shake dry and chop.

    Mix vinegar, mustard, salt, pepper and 1 pinch of sugar. Fold in the oil. Mix with the prepared salad ingredients. Leave to soak for approx. 45 minutes. Flavour again.

    Drink tip: cool white wine, e.g. a Soave.
