Ingredients

  • 7-10 Tbsp Butter
  • 500 g soft salty butter
  • 280 g Sugar
  • 1 pck. Vanilla sugar
  • 15 Egg yolk (Gr. M)
  • 100 g sweetened condensed milk
  • 1 TABLESPOON brown rum
  • 100 g Flour
  • 20 g Cornstarch
  • 1,5 Tsp Cinnamon
  • 1/2 TEASPOON ground ginger
  • 1/2 TEASPOON anise, nutmeg, cardamom
  • 1/4 TEASPOON ground cloves
  • 7-10 Tbsp Salt
  • 6 Protein (Gr. M)
  • 1 Protein (Gr. M)
  • 250 g Icing sugar
  • some Gold dust for dusting

Directions

    Grease a rectangular springform pan (approx. 23 x 34 cm) well. Whip 500 g butter, sugar and vanilla sugar in a food processor for 8-10 minutes until thick and creamy. Stir the egg yolks individually into the butter-sugar cream. Stir in condensed milk and rum. Mix flour, cornstarch and spices. Beat 6 egg whites until stiff, adding 1 pinch of salt. First fold approx. 1⁄3 beaten egg whites, then about half the flour mixture into the butter-sugar-cream. Then stir in the rest of the beaten egg white and finally the remaining flour mixture.

    Preheat the grill of the oven. Spread a thin layer (3-4 tbsp. dough) on the bottom of the springform pan and grill for about 2 minutes until the dough is light brown. Remove from the oven immediately and spread the next thin layer of dough on the baked pastry. Bake again under the grill for 1-2 minutes. Continue like this until the dough is used up, the quantity makes 10-12 layers. Leave the Baumkuchen to cool overnight on a cake rack.

    Remove the Baumkuchen from the mould and place on a board. Cut out stars of different sizes with cutters. Use cake leftovers e.g. for rum balls (see tip).

    We have cut out this number of stars in the following sizes: 9 stars (6-pointed): 7.3 cm Ø; 7 stars (5-pointed): 4.5 cm Ø; 8 stars (5-pointed): 4 cm Ø

    For the icing, stir icing sugar, 1 egg white and 1 tablespoon cold water with the whisk of the mixer until smooth. Brush the surface of the stars thickly with the icing, allow to dry. Dust with gold dust as desired.

    Knead the cake remains (approx. 600 g) with 1-2 tbsp. baking cocoa and 5 tbsp. brown rum. Form 10-15 balls from the mixture and roll in chocolate shavings.
