I bring something with party - strawberry mousse with puff pastry roses

Ingredients

  • 350 g Strawberries
  • 250 g Schmand
  • 400 g Whole milk yoghurt
  • 1 Vanillin sugar package
  • 120 g Icing sugar
  • 2 TABLESPOONS liquid honey
  • 7-10 Tbsp Juice of 2 lemons
  • 6 sheets Gelatine
  • 250 g Whipped cream
  • 2 discs (45 g each) frozen puff pastry
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Wash and clean the strawberries and puree half of them finely with a hand blender. In a bowl mix sour cream, yoghurt, vanilla sugar, icing sugar, honey and juice of 1 lemon. Soak the gelatine in cold water. Heat the juice of 1 lemon in a small saucepan, squeeze the gelatine and dissolve in it. Stir in 2 tablespoons of yoghurt mixture, then stir the gelatine into the remaining yoghurt mixture and chill for approx. 10 minutes.

    Whip the cream until stiff and fold into the slightly gelatinized yoghurt mass. Fill alternately strawberry puree and yoghurt mass in 10 glasses (approx. 200 ml each), mixing gently and finishing with strawberry puree. Cover and chill for about 1 hour.

    Place the puff pastry side by side on a lightly floured work surface and allow to thaw. Cut each into approx. 10 strips (2-3 cm wide). Cut remaining strawberries into thin slices and place on top. Carefully roll up the strips and press lightly at the end. Place on a baking tray lined with baking paper and bake in a preheated oven (electric range: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for approx. 15 minutes. Take out and let cool down. Serve with mousse.
