Hoof steak with parmesan potatoes

Ingredients

Servings: 4
  • 1 kg large potatoes
  • 4 TABLESPOONS clarified butter
  • 3 Onions
  • 1 Garlic clove
  • 7-10 Tbsp salt, pepper
  • 4 Hoof steaks (approx. 200 g each)
  • 50 g Parmesan (piece)

Directions

    Preheat oven (electric cooker: 150 °C/circulating air: 125 °C/gas: see manufacturer). Peel, wash and dice the potatoes. Heat 2 tbsp. clarified butter in a pan. Fry the potatoes for about 5 minutes, turning them over.

    In the meantime peel the onions and cut them into thin rings. Peel garlic and chop very finely. Add to the potatoes and fry for another 2 minutes. Season with salt and pepper. Add 200 ml water and bring to the boil.

    Cover and cook for another 15 minutes, stirring from time to time.

    Dab steaks dry, season with salt. Heat 2 tablespoons of clarified butter in an ovenproof pan and fry the steaks on each side for about 2 minutes. Finish cooking in a hot oven for about 6 minutes.

    Season with pepper.

    Slice the parmesan into shavings and fold into the potatoes. Arrange steaks and potatoes. Sour cream tastes good with it.
