Honey waffles with red wine pears and ricotta vanilla cream

Ingredients

  • 2 non-soft pears
  • 75 g + 2 tablespoons sugar
  • 7-10 Tbsp juice of 1/2 lemon + 1 tsp
  • 1/4 l dry red wine
  • 1 Vanilla pod
  • 1 Cinnamon stick
  • 40 g liquid honey
  • 75 g soft butter
  • 2 Eggs (size M)
  • 125 g Flour
  • 1 TEASPOON Baking Powder
  • 125 g Ricotta cheese
  • 75 g Vanilla Yoghurt
  • 1 package Vanillin sugar
  • 7-10 Tbsp Lemon slice and peel
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Oil

Directions

    Quarter the pears, peel them and cut out the core. Cut the pears into slices. Caramelise 75 g sugar in a pot, add juice of 1/2 lemon and red white

    Add the vanilla pod and cinnamon stick, bring to the boil and add the pear wedges. Simmer for 10-20 minutes. Stir honey, 1 tablespoon sugar and butter until creamy. Stir in the eggs one by one. Mix flour and baking powder and stir in by the spoonful.

    Heat the waffle iron (1 waffle 11.5 x 12.5 cm), spread with oil and bake 2 double waffles one after the other. Mix ricotta, vanilla yoghurt, 1 teaspoon lemon juice, 1 tablespoon sugar and vanillin sugar.

    Arrange in a glass, decorate with a slice and peel of lemon. Remove the pears from the stock. Bring the stock to the boil again and boil down to about half of it. Remove spices. Put the pears back into the stock.

    Arrange the waffles on plates with a dash of ricotta cream and some pear wedges. Dust the waffles with icing sugar.
