Ingredients

  • 200 g liquid honey
  • 100 g sugar (e.g. finer brown)
  • 50 g butter/margarine
  • 1 fresh egg (Gr. M)
  • 350 g Flour
  • 1 coated Tsp Baking Powder
  • 7-10 Tbsp 1 1⁄2 Tsp Gingerbread spice
  • 7-10 Tbsp Salt
  • 100 g Icing sugar
  • 7-10 Tbsp sugar pearls
  • baking paper

Directions

    Line two trays with baking paper. Heat honey, sugar and fat over medium heat until the sugar is dissolved. Cool down for about 5 minutes.

    Separate the egg. Stir egg yolk into the honey mixture. Mix flour, baking powder, spice and 1 pinch of salt and pour it on the honey mixture. First knead everything with the hand mixer and then briefly with your hands until smooth.

    Chill for about 30 minutes.

    Cut the dough in half. Form both halves of the dough into a roll (approx. 30 cm long). Cut each roll into 25 pieces, form them into balls and spread them on the trays with a distance between them. Bake one after the other in a preheated oven (electric oven: 175°C/circulating air: 150°C/gas: level 2) for 15-20 minutes.

    Let it cool down.

    Sift the icing sugar. Mix the egg whites and icing sugar in a mixing bowl with a hand mixer to a thin, creamy glaze. Spread the biscuits with it, decorate with pearls. Let the icing dry.
