Peel the garlic. Puree the feta cheese, garlic and crème fraiche. Stir in olive oil. Season with salt and pepper. For the pancakes, wash the herbs, dab dry and chop.
Mix flour, milk, eggs and salt. Stir in the herbs. Fry 12 small pancakes in hot oil until golden brown on both sides. Arrange three pancakes each with some sheep's cheese cream on a plate
