Ingredients

Servings: 2
  • 600 g waxy potatoes
  • 2 medium-sized onions
  • 50 g streaky smoked bacon
  • 1 tablespoon (20 g) clarified butter
  • 7-10 Tbsp salt, white pepper
  • 5 eggs, 5-6 tablespoons of milk
  • 1/2 bunch Chives

Directions

    Wash the potatoes and boil in water for 15-20 minutes. Then rinse and peel. Let the potatoes cool down

    Peel the onions. Dice 1, cut 1 into rings. Finely dice the bacon. In a large pan without fat crisply leave out. Add diced onions and fry briefly. Remove everything. Fry onion rings in bacon fat until golden brown and take them out

    Cut the potatoes into slices. Heat clarified butter in bacon fat. Fry the potatoes for about 10 minutes until golden brown. Turn from time to time. Add 2/3 of the onion and bacon cubes to the potatoes, season

    Whisk eggs and milk, season. Pour over the potatoes and let them simmer at low heat. Push together from time to time with the spatula

    Wash the chives and cut into small rolls. Arrange farmer's breakfast. Sprinkle with the rest of bacon and onions and chives.

    Drink: cold beer
