Ingredients

  • 750 g Potatoes
  • 1 kg Cauliflower
  • 7-10 Tbsp Salt
  • 1 Onion
  • 250 g Carrots
  • 2 (approx. 100 g) stalks of celery
  • 2 TABLESPOONS Oil
  • 300 g mixed minced meat
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Tomato paste
  • 125 ml Vegetable broth (instant)
  • 2 TABLESPOONS Butter or margarine
  • 2 TABLESPOONS Flour
  • 150 g Whipped cream
  • 7-10 Tbsp grated nutmeg
  • 40 g Cheddar cheese
  • 7-10 Tbsp Chervil

Directions

    Wash the potatoes and cook for 15-20 minutes in plenty of boiling water. Then rinse with cold water, peel and leave to rest. In the meantime, clean and wash the cauliflower and cut it into small florets. Bring 500 ml salted water to the boil. Cover the florets and cook for 8-10 minutes. Drain and collect the stock. Peel and chop onion.

    Peel and wash the carrots. Clean and wash the celery. Cut both into small cubes. Heat oil. Fry the onion and minced meat well. Add carrot and celery cubes. Season with salt and pepper. Stir in tomato paste. Deglaze with broth and boil down for 10 minutes at high heat. Melt the fat. Sweat flour in it. Deglaze with cream and cauliflower stock. Boil up while stirring constantly. Season with salt, pepper and nutmeg.

Pour the sauce over them. Sprinkle with remaining cheese. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 25-30 minutes. Serve sprinkled with tender chervil
