Ham pancakes from the tray to asparagus

Ingredients

Servings: 4
  • 125 g + 30 g flour
  • 5 Eggs (size M)
  • 100 ml + 1/4 l milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 750 g green and white asparagus
  • 30 g Butter or margarine
  • 1/4 l Vegetable broth (instant)
  • 1 Bay leaf
  • 2 TABLESPOONS Mineral water
  • 4-5 Stem(s) Chervil, basil, chives, parsley and thyme
  • 10 (à 30 g) thin slices of raw ham (e.g. cottage ham)
  • 7-10 Tbsp Pepper

Directions

    Mix flour, eggs and 100 ml milk until smooth. Season with salt and pepper. Let the dough swell for about 10 minutes. Peel white asparagus, cut off woody ends. Peel the lower third of the green asparagus and cut off the woody ends.

    Melt the fat in a pot and stir in the flour. Sweat briefly and deglaze with 1/4 litre milk and stock. Add the bay leaf and simmer at low heat for about 15 minutes. Grease the fat pan of the oven (approx. 32 x 39 cm) and line it with baking paper, putting it up at the edges.

    Grease baking paper. Stir mineral water into the dough. Pour the dough evenly onto the baking tray. Bake in the preheated oven (electric oven: 175 °C/ gas: level 2) on the 2nd rack from below for approx. 15 minutes.

    Cook white asparagus in boiling salted water for about 10 minutes. Meanwhile wash the herbs, dab dry and pluck. Finely chop the herbs, except for a little garnish. Remove pancakes from the oven and let them cool down for about 5 minutes.

    Add green asparagus to the white and cook for 3-4 minutes. Cover pancakes with ham and roll up from the narrow side. Remove bay leaf from the sauce and stir in the herbs. Season with salt and pepper.

    Remove the asparagus from the cooking water and drain. Cut the pancake roll open, arrange on a plate with asparagus and sauce. Garnish with remaining herbs.
