Spicy-filled pancake tower

Ingredients

Servings: 4
  • 3 Eggs (size M)
  • 1/4 l Milk
  • 1 pinch Salt
  • 175 g Flour
  • 1 knife tip Baking Powder
  • 275 g Gherkins
  • 400 g small tomatoes
  • 175 g cooked ham
  • 125 g medieval Gouda cheese
  • 3-4 Tbsp Mineral water
  • 40 g Butter or margarine
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper

Directions

    Mix eggs, milk, salt, flour and baking powder to a smooth, thick pancake batter. Leave to swell for about 30 minutes. Drain gherkins and cut into slices.

    Wash and clean the tomatoes and also cut them into slices. Cut the ham into strips. Grate cheese roughly. Stir mineral water into the pancake batter. Heat some fat in a pan and add about 1/6 of the batter.

    Bake a golden brown pancake at medium heat. Place the finished pancake on a large oven-proof plate and cover with some tomato, cucumber, ham and cheese. Sprinkle with a little salt and pepper and place in the preheated oven (electric cooker: 100°C/ gas: level 1).

    Place the next finished pancake on top of each one, cover with filling and put back into the oven. Place the remaining ingredients on the last pancake and bake again for about 2 minutes.
