Cook the pasta in boiling salted water according to the instructions on the packet. Cut the ham into cubes. Mix eggs, season with salt and pepper. Wash herbs, shake dry and, except for some chervil for garnishing, chop finely or cut into rolls. Stir in 3/4 of the herbs and ham
Peel and finely dice the shallots. Heat the oil in a pan. Sauté the shallots and pasta. Add the egg and ham mixture and mix briefly. Cover and allow to set for approx. 5 minutes over medium heat.
Turn the tortilla using a plate and fry for another 2-3 minutes. Sprinkle with the remaining herbs. Serve hot, lukewarm or cold
