Ingredients

  • 5 Tomatoes
  • 4 Apricots
  • 2–3 Spring onions
  • 1 red chilli pepper
  • 2 TABLESPOONS white balsamic vinegar
  • 1 TABLESPOON liquid honey
  • 3 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 250 g fresh tagliatelle (chiller cabinet)
  • 500 g Fish fillet (e.g. halibut or saithe)

Directions

    For the salsa, wash the tomatoes and cut them into thin slices. Wash and stone the apricots and cut them into thin slices as well. Clean and wash spring onions and cut them into rings. Clean chillies, cut lengthwise, remove seeds, wash and cut into thin rings.

    Mix vinegar, honey and 1 tablespoon of oil. Mix with the prepared ingredients and season to taste with salt.

    Put the pasta in boiling salted water and bring to the boil briefly (otherwise they will stick together too much). Drain and rinse with cold water.

    Wash the fish, dab dry and cut into 6 pieces. Season with salt and pepper. Divide the noodles into 6 portions and spread them side by side on a work surface. Place the fish pieces on top and wrap in the noodles.

    Heat 2 tablespoons of oil in a large frying pan. Fry the pasta packs first on the side with the noodle ends over medium heat for 3 minutes, then turn carefully and continue to fry for 4-6 minutes. Serve the noodle packs with the salsa.
