Hack-Stroganoff with Rösti corners (diabetics)

Ingredients

  • 2 peeled onions
  • 50 g Gherkins
  • 250 g cleaned mushrooms
  • 8 frozen rösti corners
  • 2 TABLESPOONS Oil
  • 600 g mixed minced meat
  • 1 TABLESPOON medium hot mustard
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly ground black pepper
  • 1/4 l Vegetable broth (instant)
  • 100 g Whipped cream
  • 7-10 Tbsp vegetable binder
  • 1/2 bunch Parsley
  • baking paper

Directions

    Dice the onions. Cut cucumbers into sticks. Wash and slice the mushrooms. Place the Rösti corners on a baking tray lined with baking paper and bake in a preheated oven (electric range: 200 °C/ gas: level 3) for about 20 minutes. Turn the Rösti Corners halfway through the baking time. In the meantime, heat up the oil in a pan, add the minced meat and fry over medium heat, turning.

    Add the onions and mushrooms and fry until brown. Stir in mustard. Season everything with salt and pepper. Add cucumbers and deglaze with broth. Simmer at medium heat for about 8 minutes. In the meantime whip cream with the whisk of the hand mixer. Stir in binding agent and bring to the boil again. Season to taste with salt and pepper. Stir in the cream. In the meantime wash parsley, dab dry and chop. Remove the hash browns from the oven.
