Soak bread in cold water. Peel onions and garlic and dice finely. Heat the oil in a pot. Fry half onion and half garlic. Deglaze with tomatoes and 5-6 tablespoons of water, stir in 2 tablespoons of tomato paste, simmer for 3-4 minutes, season with salt, pepper and sugar
Squeeze out the slices of bread well and knead them with minced meat, ground pork, eggs, mustard, 2 tbsp. tomato paste, a little salt, pepper, paprika, dried herbs and the remaining half onion and garlic. Press minced meat evenly onto the greased fat pan (32 x 39 cm) of the oven and pre-bake in the preheated oven (electric cooker: 250 °C/ convection oven: 252 °C/ gas: see manufacturer) for approx. 15 minutes. In the meantime, clean and slice the mushrooms. Wash tomatoes, dab dry and cut in half. Grate Gouda and Parmesan cheese
Spread the sauce on the mince, cover with mushrooms and tomatoes and sprinkle with Gouda and Parmesan cheese. Pour mozzarella and gorgonzola as stains on top. Bake for another 35-45 minutes in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer). Remove, cut into pieces and garnish with basil and rocket
