Peel and slice the onion. Wash, clean and cut the tomatoes into eight pieces. Clean, wash and drain the cucumber and peppers. Cut the peppers into large pieces. Halve cucumber and cut diagonally into pieces.
Dice sheep's cheese. Wash oregano, dab dry and chop the leaves, except for something to garnish. Halve the olives. Mix onion, tomato, paprika and cucumber pieces and arrange on 4 plates.
Season with salt and pepper and sprinkle with oregano. Spread cheese and olives on top and sprinkle with vinegar and olive oil. Serve garnished with pickled peppers and oregano. Serve with flat bread or fresh white bread.
