Gratinated fillet pan with beans

Ingredients

  • 1 thick pork tenderloin (approx. 350 g)
  • 1 (approx. 300 g) double chicken filet
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 packages (300 g each) very fine frozen green beans
  • 1/2 TEASPOON dried savory
  • 75 g Shallots
  • 1/2 bunch Parsley
  • 75 g Bacon
  • 40 g Butter or margarine
  • 30 g Flour
  • 1/4 l Vegetable broth (instant)
  • 1/4 l Milk
  • 100 g grated medieval Gouda cheese
  • 1 Egg Yolk
  • 7-10 Tbsp Grease
  • 7-10 Tbsp fresh herbs

Directions

    Wash the pork and chicken fillet and pat dry. Halve the chicken filet. Heat oil in a pan and fry the fillets while turning them golden brown (pork fillet approx. 15, chicken fillet 9-10 minutes).

    Season the meat with salt and pepper and remove from the pan. Put deep-frozen beans and savory in boiling salted water, bring to the boil and cook for about 4 minutes. Pour the beans onto a sieve and drain.

    Peel and quarter the shallots. Wash parsley, dab dry and chop except for something to garnish. Cut bacon into strips. Heat 10 g fat in a pan, fry the bacon and shallots until crispy.

    Add beans and parsley, toss in and season with salt and pepper. Heat the remaining fat in a pot and sauté the flour in it. Add stock and milk while stirring, bring to the boil and simmer for about 5 minutes.

    Add cheese and melt in the sauce. Mix the egg yolks and some hot sauce, then stir into the rest of the sauce and remove from the heat. Season to taste with salt and pepper. Put the beans into a greased ovenproof dish.

    Cut the chicken and pork fillet into slices and arrange on top. Pour over the cheese sauce and bake in the preheated oven (electric cooker: 225 ° C/ gas: level 4) for about 20 minutes. Serve garnished with remaining parsley and other fresh herbs.
