Ingredients

Servings: 4
  • 4 Chicken fillets (approx. 150 g each)
  • 2 Apples (about 200 g each)
  • 2 spring onions (approx. 30 g each)
  • 50 g diced bacon
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g Whipped cream
  • 3-4 Tbsp medium hot mustard
  • 75 ml Cider (cider)
  • 200 g Basmati rice
  • 7-10 Tbsp Grease

Directions

    Wash the meat and dab dry. Wash apples and grate dry. Remove the core with an apple corer. Cut apples into thin slices. Clean and wash spring onions and cut into rings.

    Leave the bacon in a hot pan for about 2 minutes. Add spring onion rings and cook for another 2 minutes while turning. Lay out 4 greased ramekins with the apple slices in a fan-shaped pattern. Season the meat with salt and pepper and put it into the dish.

    Mix cream, mustard and cider. Season to taste with salt and pepper. Pour mustard-cider sauce over the meat. Spread spring onion rings and bacon over it. Cook in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 20 minutes.

    Meanwhile, cook the rice in boiling salted water according to the instructions on the packet. Drain the rice and let it drain. Arrange the rice in bowls and serve with the chicken fillets.
