Gratinated asparagus power bread

Ingredients

  • 500 g white asparagus
  • 500 g green asparagus
  • 7-10 Tbsp Salt
  • 1 TEASPOON Sugar
  • 200 g Salmon ham
  • 50-60 g Butter or margarine
  • 30 g Flour
  • 1/4 l Milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 2 TABLESPOONS Whipped cream
  • 100 g grated Gruyère cheese
  • 4 large slices of strong brown bread (40-50 g each)
  • 7-10 Tbsp Parsley

    Wash and peel the white asparagus and cut off the woody ends. Peel only the lower third of the green asparagus and cut off the woody ends. Put white asparagus in boiling salted water, add sugar and cook for 15-20 minutes. Add green asparagus to the last 10 minutes. Drain the asparagus. Cut ham into cubes. Heat 30 g fat in a saucepan, sauté flour in it, then add milk while stirring.

    Simmer sauce for 2-3 minutes and season with salt, pepper and nutmeg. Stir in cream and 75 g cheese until the cheese has combined with the sauce. Add ham. Roast brown bread in the preheated oven (electric cooker: 225 ° C/ gas: level 4) for about 4 minutes. Coat bread with remaining fat, cover with asparagus and coat with the cheese sauce. Sprinkle the rest of the cheese on top and bake in the preheated oven (electric cooker: 225 ° C/ gas: level 4) for approx. 15 minutes. Serve immediately garnished with parsley
