Ingredients

  • 450 g Wheat flour (Type 1050)
  • 450 g Wholemeal oat flour
  • 2 cubes (42 g each) Yeast
  • 375 ml tepid milk
  • 120 g Butter or margarine
  • 100 g Honey
  • 300 g Raisins
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1/4 TEASPOON Salt
  • 3 Eggs (weight category 2)

  • 7-10 Tbsp some unpeeled
  • 7-10 Tbsp Pumpkin seeds
  • 2 TABLESPOONS unground poppy seed
  • 2 TABLESPOONS Sesame seeds
  • 1 accumulated Tbsp
  • 7-10 Tbsp Linseed
  • 1 Hazelnut
  • 1 TABLESPOON Milk

Directions

    Mix the two types of flour and place in a bowl. Press a depression in the middle. Crumble yeast into it. Pour milk over it. Mix yeast with some flour to a pre-dough. Cover and leave to rise in a warm place for about 15 minutes.

    Melt the fat. Add to the flour together with the honey, raisins, lemon peel, salt and eggs. Knead with the dough hook of the hand mixer to a smooth yeast dough. Cover and leave to rise for another 20 minutes. Then beat the yeast dough again well. Halve the dough and form the rabbit body from one half and place it on a baking tray lined with baking paper. Remove some of the dough from the other half for "braces", "whiskers" and "nose". From the rest form head, ears, arms and legs. Place all pieces in the appropriate places and press down well. Place "braces" etc. on top. If there is still dough left, form small rolls and bake them later.
