Gooseberry groats with semolina foam

Ingredients

Servings: 4
  • 500 g Gooseberries and 1/4 l light grape juice or 1 glass (720 ml) gooseberries
  • 2 Kiwis
  • 1/2 package Pudding powder "Vanilla Flavor
  • 7-10 Tbsp (to boil; for 1/2 l milk)
  • 4 tablespoons (60 g) Sugar
  • 1/4 l Milk
  • 1 package Vanillin sugar
  • 1 tablespoon (20 g) Semolina
  • 1 fresh egg (Gr. M)

Directions

    Clean and wash gooseberries. Drain gooseberries from the glass, collect the juice, measure 1/4 l. Peel and slice the kiwis

    Stir pudding powder and 3 tbsp. grape or gooseberry juice until smooth. Boil up the rest of the juice and 2 tbsp. sugar. Stir in the pudding powder and bring to the boil briefly. Stir in gooseberries and kiwis, except 4 pieces or slices each. Let the groats cool down a little. Pour into 4 glasses and let cool off

    Bring milk, vanilla sugar and 2 tablespoons of sugar to the boil. Stir in semolina and bring to the boil. Remove from heat. Let semolina swell for about 5 minutes. Separate egg. Mix egg yolk and some semolina. Stir into the semolina

    Beat egg whites until stiff. Fold into the semolina. Spread the semolina foam lukewarm on the semolina. Decorate with the remaining fruit
