Peel, wash and grate the carrots in a bowl. Peel, grate or finely chop ginger. Wash, quarter and core apples. Cut the fruit flesh into thin slices and sprinkle with 1-2 tbsp. lemon juice.
Mix with carrots and ginger. Mix the remaining lemon juice, salt, pepper and a little sugar. Fold in 2-3 tablespoons of oil. Mix into the salad.
Whisk the egg. Crumble almonds and mix with breadcrumbs. First turn the cheese taler in flour, then pass it through the egg and finally turn it in the almond mixture. Press down lightly.
Heat 2-3 tablespoons of oil in a coated frying pan. Fry the cheese taler in it until golden brown on each side, remove. Wash the basil, remove the leaves and put some aside for garnishing. Cut the rest finely and fold into the salad.
Season again. Arrange cheese taler and salad. Garnish with basil and balsamic cream.
