Gnocchi with vegetable sauce

Ingredients

Servings: 4
  • 500 g colourful peppers
  • 2 Carrots
  • 1 Onion
  • 2 TABLESPOONS Oil
  • 500 g strained tomatoes
  • 1 TEASPOON Instant vegetable stock
  • 7-10 Tbsp dried basil
  • 500 g fresh gnocchi (cooling shelf)
  • 4-5 Tbsp Whipped cream
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 40 g grated gouda cheese
  • 7-10 Tbsp Basil

Directions

    Clean, wash and cut the peppers into strips. Peel, wash and dice the carrots. Peel and chop onion. Heat oil in a pot. Fry the bell pepper, carrots and onion. Add tomatoes and 100 ml water, stir in broth and basil and bring to the boil.

    Simmer for about 8 minutes. In the meantime, put the gnocchi in boiling water and let them simmer for 1 minute. Season sauce with cream, salt and pepper. Drain gnocchi and let them drain. Arrange gnocchi and sauce on plates, sprinkle with cheese and garnish with basil
