Glazed turkey breast

Ingredients

Servings: 4
  • 1 kg Turkey Breast
  • 4 TABLESPOONS Balsamic vinegar
  • 4 TABLESPOONS Honey
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 2 TABLESPOONS Oil
  • 1 collar Soup Greens
  • 1/4 l clear soup
  • 1 small head cauliflower
  • 250 g Mushrooms
  • 250 g Sweet peas
  • 3 TABLESPOONS Butter
  • 200 g Whipped cream
  • 1-2 TABLESPOONS dark sauce thickener
  • 20 g Sesame seeds

Directions

    Wash the turkey breast and dab dry. Brush all around with 3 tablespoons of vinegar and 1 tablespoon of honey. Leave to marinate for at least 4 hours

    Season meat with salt and pepper and drizzle with oil. Clean, wash and roughly dice the soup greens. Put the meat and soup vegetables on the fat pan of the oven. Bake in the preheated oven (electric: 200 °C/ gas: level 3) for 60-70 minutes. In between, brush with 2 tablespoons of honey and pour on the stock bit by bit

    Clean and wash the vegetables. Divide cauliflower into florets. Cut mushrooms into quarters. Cook cauliflower and sugar peas in little boiling salted water for about 8 minutes. Brown the mushrooms in 1 tablespoon of hot butter. Season with salt and pepper

    Take the meat out and let it rest for about 5 minutes. Pour the meat stock through a sieve into a pot. Add cream, bring to the boil and thicken with the sauce thickener. Season to taste with remaining honey, vinegar, salt and pepper

    Heat the remaining butter. Sauté sesame seeds in it. Add vegetables and toss in sesame butter. Arrange meat and vegetables on a plate. Serve with parsley potatoes
