Glazed pork steaks with orange marmalade

Ingredients

Servings: 4
  • 800 g Potatoes
  • 1 kg Broccoli
  • 4 Pork loin steaks (approx. 200 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS clarified butter
  • 100 g Orange marmalade
  • 2 TABLESPOONS Worcestershire sauce
  • 2 TABLESPOONS coarse mustard
  • 7-10 Tbsp freshly grated nutmeg

Directions

    Wash the potatoes and cook in boiling water for about 20 minutes. Cut broccoli into florets from the stalk, wash and blanch in boiling salted water for about 3 minutes

    Dab the meat dry and season with salt and pepper. Drain potatoes, rinse with cold water, peel and cut into thick slices. Heat 3 tablespoons of clarified butter in a large pan. Fry the potatoes for about 10 minutes while turning. Season with salt

    In the meantime, heat 1 tbsp. clarified butter in a second pan and fry the meat for approx. 6 minutes while turning. Take out and keep warm. Add orange marmalade, Worcestershire sauce and mustard to the pan and remove the frying pan. Add broccoli to the potatoes and heat up in the closed pan for approx. 3 minutes. Season with nutmeg. Put the meat back into the pan and turn in the orange sauce. Arrange on plates
