Wash, halve and stone the apricots. Sprinkle the flesh with lemon juice. Put the Amarettini in a freezer bag. Roll over with a pastry roll, crumble coarsely.
Heat butter in a frying pan. Stir in the Amarettini, roast briefly. Fry the apricots for approx. 3 minutes, turning them while sprinkling them with sugar - it should melt slightly. Foam the soy drink with a hand blender and serve with the apricots.
