Ingredients

  • 80 g candied ginger
  • 200 g Flour
  • 100 g cold butter
  • 50 g Icing sugar
  • 1 Egg (Gr. M)
  • 1 pinch(es) Salt
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Grate the ginger finely. Pour the flour into a large mixing bowl and press a depression in the middle. Add butter in pieces, ginger, sugar, egg and salt to the hollow and knead quickly with your hands to a smooth dough.

    Roll out the dough on the floured work surface to a thickness of approx. 3 mm. Cut out approx. 40 biscuits with various biscuit cutters. Knead the remaining dough and roll out again. Place the biscuits on 2 baking trays lined with baking paper, keeping a distance of about 0.5 cm between them. Bake the biscuits one by one in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for about 9 minutes until golden brown.

    Carefully place the biscuits on a cake rack and let them cool down.
