Roughly chop the Amarena cherries. Chop pistachios, chocolate and biscuits. Cream egg yolk and sugar. Add orange flavour. Fold in cherries, pistachios, almonds, chocolate and biscuits. Beat 250 g cream until stiff and fold into the mixture. Line a stollen or crate mould (1 litre capacity) with cling film.
Pour in the mixture, smooth it down and let it set overnight in the freezer. Whip 125 g cream until stiff. Remove the stollen from the mould. Spread with the cream. Place in the freezer for another 1 hour. Arrange the orange stollen on a plate and decorate with orange peel, orange slices, candied almonds and lemon balm.
