Clean the cabbage and cut into thin strips. Halve red peppers, clean, wash and cut into thin strips. Halve yellow peppers, clean, wash and cut into small cubes.
Clean and wash spring onions and cut them diagonally into thin rings. Peel, wash and grate the carrots. Wash and clean the radishes and cut or slice them into thin slices. Wash lime hot, grate dry and thinly grate half of the peel.
Halve the lime and squeeze it. Peel garlic and chop very finely. Mix 3 tablespoons lime juice, coconut milk, lime zest, soy sauce, garlic and oil and season with cayenne pepper, sugar and a little salt.
Add vegetables and mix well. Wash the coriander, shake dry and chop the leaves of 6 stems coarsely. Arrange the Cole Slaw and garnish with the rest of the coriander.
