Gently roasted goose breast with baked apple

Ingredients

Servings: 4
  • 1 Goose breast (approx. 1,4 kg; with skin and bones)
  • 4 Onions
  • 1 potty Thyme
  • 7-10 Tbsp salt, pepper
  • 4 medium sized apples (e.g. Cox Orange)
  • 1 TABLESPOON flaked almonds
  • 3 Stem(s) Parsley
  • 500 g fresh egg spaetzle (refrigerated shelf)

Directions

    Wash the goose breast and pat dry. Peel and halve the onions. Wash thyme, shake dry, remove leaves and chop finely. Mix 1 tsp salt, 1 tsp pepper and half of the thyme. Rub the goose breast all around.

    Place the goose breast and onions on the fat pan of the oven. Bake in the preheated oven (electric: 100 °C/circulating air and gas: see manufacturer) for 4-4 1⁄4 hours.

    In the meantime wash the apples and core them with an apple corer. Add the apples to the fat pan about 40 minutes before the end of the frying time. Roast almond flakes until golden brown. About 10 minutes before the end of the roasting time, brush the goose breast with strongly salted water and roast it crisply at high temperature.

    Wash parsley, shake dry and chop finely. Mix parsley and remaining thyme leaves. Prepare the spaetzle in boiling salted water according to the instructions on the packet. Drain and allow to drain.

    In the meantime take goose breast out of the oven. Remove meat from the bone and cut into pieces. Arrange everything. Sprinkle baked apples with almonds and herb mixture. Serve with balsamic lentils or vanilla red cabbage.
