Wash the potatoes thoroughly and cook covered in boiling water for 20-25 minutes. Boil egg in boiling water for about 10 minutes until hard, drain, quench and peel. Finely dice the gherkins. Wash parsley, shake dry, pluck off leaves and chop finely
Drain the potatoes, rinse under cold water and peel the skin. Let the potatoes cool down and cut into slices. Finely chop the egg. Mix mayonnaise with egg, gherkins and parsley, season with salt and pepper
Peel and slice the onion. Heat the oil in a pan and fry the onion for about 5 minutes. Put potato slices into the pan and fry them for about 7 minutes, turning them until golden brown, season with salt and pepper. Wash chives, shake dry and cut into small rolls. Drain mixed pickles, if necessary chop gherkins and corn on the cob. Mix into the potatoes, warm up briefly. Cut sour meat into bite-sized pieces. Serve fried potatoes with sour meat and tartar sauce
