Fried peppers on leaf salad

Ingredients

Servings: 4
  • 2 small yellow peppers
  • 150 g Leaf salad (e.g. rocket and oak leaf salad)
  • 1 small onion
  • 1 Garlic clove
  • 4 Stem(s) fresher or 1⁄2 Tsp
  • 7-10 Tbsp dried thyme
  • 4 discs Bacon
  • 2-3 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 100 g black olives
  • 4-5 Tbsp White wine vinegar

Directions

    Clean and wash the peppers and salads. Cut the paprika into wide strips. Pluck the salads finely. Peel and finely chop onion and garlic. Wash thyme and pluck off leaves. Cut bacon into strips.

    Heat 1 tablespoon of oil. Fry the peppers for 2-3 minutes. Fry the garlic briefly. Season with salt and pepper. Add olives. Take out and let cool down lukewarm.

    Fry the bacon in 1-2 tablespoons of hot oil until crispy. Fry the onion briefly. Deglaze with vinegar, bring to the boil. Stir in thyme. Season with pepper, some sugar and salt if necessary. Arrange salad and paprika.

    Spread marinade over it.
