Fried noodles with zucchini

Ingredients

Servings: 4
  • 4 medium zucchini
  • 2 medium-sized tomatoes
  • 7-10 Tbsp Salt
  • 400 g Tortiglioni (or short
  • 7-10 Tbsp macaroni)
  • 2 Tbsp. oil
  • 7-10 Tbsp white pepper
  • 2 TABLESPOONS Butter or margarine
  • 1 pinch Sugar
  • 75 g grated parmesan cheese
  • 1 TABLESPOON Lemon juice
  • 1/2 potty Basil
  • 1 Lemon wedge for garnishing

Directions

    Clean, wash and thinly slice the zucchini. Wash, quarter and seed the tomatoes. Dice the flesh. Boil up two litres of salted water . Cook the pasta for eight minutes until al dente.

    Heat the oil in a large frying pan. Brown the zucchini slices in it while turning. Season with salt and pepper. Remove and put aside. Heat the fat in the pan and fry the tomato cubes in it.

    Season to taste with salt, pepper and sugar. Drain the pasta. Add to the tomatoes with the zucchini. Fry everything briefly and mix with parmesan. Flavour with pepper and lemon juice. Wash the basil, pluck the leaves from the stems and add.

    Garnish as desired with the lemon wedge.
