Fried feta with spinach noodles

Ingredients

Servings: 4
  • 250 g small cherry tomatoes
  • 1 medium onion
  • 1 Garlic clove
  • 400–500 g Feta cheese
  • 1–2 Eggs
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Salt
  • 4 TABLESPOONS Flour
  • 4-6 Tbsp Breadcrumbs
  • 250 g short noodles (e.g. Kritharaki; Greek rice noodles)
  • 3 TABLESPOONS Olive oil
  • 250 g Frozen leaf spinach
  • 1⁄2 Tsp Vegetable broth

Directions

    Wash and halve the tomatoes. Peel onion and garlic. Dice onion, chop garlic.

    Cut the feta into 8 wide pieces. Whisk the eggs. Season with pepper and a little salt. Turn cheese first in flour, then in egg and finally in breadcrumbs. Press on. Cook pasta in plenty of boiling salted water for about 10 minutes.

    Heat 1 tablespoon of oil in a saucepan. Sauté onion and garlic in it. Add the frozen spinach, 5 tbsp. water and broth, bring to the boil. Cover and allow to defrost over medium heat for about 10 minutes. Season with salt and pepper.

    Add the tomatoes and heat briefly.

    In the meantime heat 2 tablespoons of oil in a coated pan. Fry the cheese for 4-5 minutes until golden brown. Drain the pasta and mix it with the spinach. Season to taste with salt and pepper. Arrange everything.
