Peel and chop onion and garlic. Steam them in 1 tbsp. hot oil. Add spinach without defrosting and pour on 100 ml water. Cover and steam over medium heat for about 16 minutes.
Roast pine nuts in a pan without fat. Cut feta cheese into four equal slices. For the breadcrumbs, mix breadcrumbs and thyme. Whisk the egg well
Turn the feta first in egg, then in breadcrumbs. Fry in 1 tablespoon of oil from one side for 3-4 minutes until golden brown. Clean, wash and dice the tomatoes. Add to the spinach about 5 minutes before the end of cooking time
Turn the feta, fry for another 3-4 minutes. Bring spinach to the boil while stirring, season. Serve with feta. Sprinkle with pine nuts. Flatbread tastes good with it
