Clean, wash and drain the spinach. Halve the peppers, clean, wash and cut into strips. Wash tarragon, shake dry and finely chop the leaves of 2 stems.
Peel and finely chop the garlic. Heat 1 tablespoon of oil in a frying pan. Sauté the peppers for about 4 minutes, then add the spinach and garlic. Continue cooking spinach for about 2 minutes. Season to taste with salt, pepper and nutmeg.
Heat 1 tablespoon of oil in a frying pan. Fry the eggs in it until they are fried. Mix yoghurt, mustard and chopped tarragon and season to taste with salt, pepper and a little lemon juice. Arrange the fried eggs, spinach and sauce and garnish with tarragon.
