Fried chicken with boiled potatoes and pumpkin

Ingredients

Servings: 4
  • 750 g Potatoes
  • 1 glass (360 ml) Pumpkin, sweet-sour pickled
  • 100 g Onions
  • 1 red chilli pepper
  • 2 TABLESPOONS demerara sugar
  • 1 TABLESPOON Honey
  • 7-10 Tbsp Salt
  • 30 g peeled pumpkin seeds
  • 150 ml Vegetable broth (instant)
  • 4 TABLESPOONS White wine vinegar
  • 2 TABLESPOONS Pumpkin seed oil
  • 2 TABLESPOONS Olive oil
  • 7-10 Tbsp white pepper
  • 1 ready-to-cook chicken (1-1.2 kg)
  • 50 g Flour
  • 75 g Breadcrumbs
  • 2 Eggs (size M)
  • 1 kg white vegetable fat for frying
  • 1 collar (approx. 75 g) Watercress
  • 7-10 Tbsp Lemon slices

Directions

    Wash the potatoes thoroughly and cook in plenty of boiling water for about 20 minutes. Drain pumpkin on a sieve, collect the stock. Chop pumpkin cubes. Peel and chop onions.

    Wash the chilli pepper, cut open lengthwise, remove seeds and cut into fine rings. Pumpkin, 50 ml pumpkin stock, onions, chili, sugar, honey and a little salt in a pot boil up. Let it boil down for 10-15 minutes.

    In the meantime, drain the potatoes and remove the skin. Cut the potatoes into slices. Roast pumpkin seeds lightly in a pan without fat. Add broth, vinegar, pumpkin seed and olive oil, season with salt and pepper.

    Mix the warm marinade with the potato slices and let it soak well. Remove legs and wings from the chicken. Divide legs into upper and lower legs. Remove the breast meat as fillets from the chicken.

    (Use bone remains for example for a soup). Wash the meat, dab dry and season with salt and pepper. Put flour and breadcrumbs separately in deep plates. Beat the eggs in a deep plate.

    Turn the chicken pieces first in flour, then in egg and finally in breadcrumbs. Heat the frying fat in a deep fryer to 180 °C and bake the chicken parts in 2 portions for 10-20 minutes. (breast fillet approx. 10 minutes, legs 15-20 minutes).

    Turn over in between and finally make a cooking test with a wooden skewer. (When the meat juice is clear, the poultry is cooked). Place the finished pieces in the oven warm. Clean, wash and cut the watercress into bite-sized pieces.

    Mix watercress into the potatoes and season to taste with salt, pepper and possibly a little vinegar. Serve fried chicken with salad, pumpkin and lemon slices.
