Flummery of two chocolates

Ingredients

  • 35 g Dark chocolate
  • 50 g white chocolate
  • 40 g Cornstarch
  • 30 g Sugar
  • 500 ml Milk
  • 5 g Cocoa powder
  • 1 TABLESPOON cherry brandy
  • 150 g Whipped cream
  • 4 Cocktail cherries with stem

Directions

    Place glasses at an angle in the hollows of a muffin tray. Finely grate approx. 10 g of the dark chocolate and chop the rest into small pieces. Chop the white chocolate into small pieces as well. Mix 20 g starch, 15 g sugar and 50 ml milk until smooth. Bring 200 ml milk to the boil in a saucepan, remove from the heat, stir in the white chocolate and the starch. Put back on the hot stove and stir. Let simmer for about 1 minute. Pour the pudding immediately into the glasses with the help of a teaspoon and chill for at least 30 minutes

    Stir 20 g starch, 5 g cocoa, 15 g sugar and 75 ml milk until smooth. Bring 175 ml milk to the boil in a saucepan, remove from the heat, stir in chopped dark chocolate and the mixed starch. Put back on the hot stove and stir. Let simmer for about 1 minute. Stir in kirsch at the end. Put the glasses straight again and immediately fill the pudding into the glasses with the help of a teaspoon and let it simmer for at least 45 minutes.

    Whip the cream until stiff with the whisks of a hand mixer, fill into a piping bag with a star-shaped spout and squirt onto the pudding. Sprinkle cream with grated chocolate and decorate with 1 cherry each
