Flans with onion confit

Ingredients

  • 7-10 Tbsp Pour 4 pers
  • 7-10 Tbsp 4 œufs + 1 jaune
  • 120 g de parmesan
  • 1 bunch of fresh onions
  • 20 cl of single cream
  • 2 feuilles de suck
  • 7-10 Tbsp 1 tablespoon balsamic vinegar
  • 10 g de sucre
  • 7-10 Tbsp huile d'olive
  • 7-10 Tbsp sel et poivre

Directions

    1 Preheat the oven by placing a baking dish half-filled with water in it. Grate the parmesan cheese. In a bowl, beat the whole eggs and yolks with the cream and Parmesan cheese. Season with salt and pepper.

    2 Divide the preparation into small moulds (preferably made of silicone). Bake and cook for about 30 minutes in the oven's double boiler. Remove from the oven and water bath, let cool.

    3 Lower the oven to 180 °C (th 6). Peel and quarter the larger onions. Put them in a dish, sprinkle them with vinegar and a drizzle of oil. Sprinkle the sugar, salt. Add the sage and Bake for 20 minutes.

    4 Unmould the blanks and serve them with the onion confit.
