Fixed basil chicken with melted tomatoes

Ingredients

Servings: 4
  • 1 Garlic clove
  • 1⁄2 Federation Basil
  • 4 Chicken fillets (approx. 150 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 6 TABLESPOONS Olive oil
  • 8 discs (approx. 200 g) Ciabatta
  • 500 g cherry tomatoes
  • 1 Onion
  • 2-3 TEASPOONS Sugar
  • 2 TABLESPOONS Balsamic vinegar
  • 25 g Parmesan (piece)
  • baking paper

Directions

    Peel and chop the garlic. Wash basil, shake dry and chop. Wash the meat, dab dry and season with salt and pepper. Heat 2 tablespoons of oil in a frying pan. Fry the ciabatta in it until crispy, take it out.

    Heat 2 tablespoons of oil in the frying fat. Fry the meat on all sides at medium heat for 10-12 minutes. Add garlic and 2 tbsp. basil shortly before the end of the frying time.

    Wash the tomatoes and grate them dry. Peel and halve the onion and cut into thin strips. Heat 2 tablespoons of oil. Sauté the onion for about 2 minutes. Add tomatoes and sugar and steam for about 4 minutes.

    Deglaze with vinegar and 150 ml water, bring to the boil and simmer for 1-2 minutes. Season to taste. Slice parmesan. Arrange everything. Add roasted ciabatta.
