Fish Saltimbocca with fried vegetables

Ingredients

Servings: 4
  • 1 large zucchini (about 300 g)
  • 300 g cherry tomatoes
  • 300 g Shallots or red onions
  • 6 Stem(s) Sage
  • 4 (250 g each) Saithe fillets
  • 6 discs (15 g each) Parma ham
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Olive oil
  • 1 TABLESPOON light balsamic vinegar
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Toothpicks

Directions

    Zucchini clean, wash, lengthwise halve and cut into slices. Wash and halve the tomatoes. Peel shallots and cut into strips. Wash sage, dab dry, put 4 stems aside for garnishing.

    Pluck the remaining sage from the stems. Wash the fish, dab dry and cut into 3 pieces. Cut ham slices lengthwise in half. Season fish with salt and pepper. Cover with 1 sage leaf each, wrap with ham and fix with toothpick.

    Heat 1 tablespoon of oil in a frying pan. Fry the vegetables in it for about 7 minutes while tossing. Deglaze with vinegar, season with salt, pepper and sugar. Heat 1 tablespoon of oil in another pan and fry the fish for about 7 minutes until golden brown.

    Arrange vegetables and fish on preheated plates, garnish with sage.
