Fillet of beef with chanterelle cream and croquettes

Ingredients

  • 250 g Chanterelles
  • 250 g cherry tomatoes
  • 1 collar Spring onions
  • 1 package (450 g) frozen croquettes
  • 4 Stem(s) Thyme
  • 4 Beef fillet medallions (approx. 180 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 TABLESPOONS Oil
  • 250 g Whipped cream
  • baking paper
  • 7-10 Tbsp Kitchen yarn

Directions

    Clean the chanterelles and wash them thoroughly. Drain on kitchen paper. Wash the tomatoes. Clean and wash spring onions and cut them diagonally into pieces. Put croquettes on a baking tray lined with baking paper and bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 18-20 minutes.

    Wash the thyme and dab dry. Wash the meat, dab dry and season on both sides with salt and pepper. Tie medallions into shape with kitchen string, tying one stalk of thyme into each medallion. Heat 2 tablespoons of oil in a frying pan and fry the medallions vigorously for about 10 minutes, turning them over.

    Remove meat from the pan and keep warm. Sauté the chanterelles briefly and season with salt and pepper. Then deglaze with cream and simmer for about 5 minutes. In the meantime heat 1 tablespoon of oil in a pan.

    Put tomatoes and spring onions in the pan and season with salt and pepper. Fry the vegetables for 3-4 minutes. Arrange croquettes, vegetables, chanterelles and meat.
