Mix eggs and flour with a whisk in a bowl. Add milk bit by bit, then season with salt and pepper
Heat the fat in portions (1/2 tsp. each) in a pan (26 cm Ø). Put 1/4 of the dough into the pan. Fry the pancakes for 3-4 minutes while turning them until golden brown. Bake the rest of the dough in the same way. Let the pancakes cool down. Wash the rocket and dab dry. Drain smoked peppers in a sieve. Clean and wash spring onions and cut into fine rings.
Spread cooled pancakes with 1 tablespoon cream cheese each. Spread rocket generously on top and finally cover with the turkey breast, paprika and spring onions. Roll up and halve the pancakes
