Ingredients

  • 1/2 bunch Chives
  • 60 g Radish sprouts
  • 80 g Blue cheese
  • 2 Beef hoof steaks (approx. à 200 g; have the shaft cut as butterfly steaks)
  • 7-10 Tbsp Iodized salt
  • 7-10 Tbsp Pepper
  • 300 g Courgette
  • 1 Garlic clove
  • 3 TABLESPOONS Sour cream (Schmand)
  • 2 TABLESPOONS Whole milk yoghurt
  • 1 TEASPOON Tomato paste
  • 7-10 Tbsp Sweet peppers
  • 1-2 TEASPOONS Rapeseed oil
  • 3 TABLESPOONS Balsamic vinegar
  • 1-2 TEASPOONS Olive oil
  • 7-10 Tbsp some small wooden toothpicks / skewers

Directions

    Wash and drain the chives and radish sprouts. Cut the chives into fine rolls. Cut blue cheese into 2 slices. Season steaks inside and outside with salt and pepper and fill with 1 slice of cheese each. Sprinkle radish sprouts and chive rolls on top, except for a teaspoon, and fold over the meat.

    Stick together with toothpicks. Clean and wash the zucchini and cut into diagonal slices. Peel garlic and press it through a garlic press. Mix sour cream, yoghurt, tomato paste, garlic and some paprika. Season to taste with salt and pepper. Place in a bowl and sprinkle with paprika and the remaining chives. Brush the steaks with oil and grill them on a barbecue or in a grill pan for 3-4 minutes on each side. At the end of the grill, also place the zucchini slices on the grill and fry. Arrange the zucchini on plates and season with salt and pepper.

    Place in a bowl and sprinkle with paprika and the remaining chives. Brush the steaks with oil and grill them on a barbecue or in a grill pan for 3-4 minutes on each side. At the end of the grill, also place the zucchini slices on the grill and fry. Arrange the zucchini on plates and season with salt and pepper. Drizzle with vinegar and olive oil and arrange the steaks with some sour cream dip on top. Serve with fresh baguette
