Wash and drain the chives and radish sprouts. Cut the chives into fine rolls. Cut blue cheese into 2 slices. Season steaks inside and outside with salt and pepper and fill with 1 slice of cheese each. Sprinkle radish sprouts and chive rolls on top, except for a teaspoon, and fold over the meat.

Mix sour cream, yoghurt, tomato paste, garlic and some paprika. Season to taste with salt and pepper. Place in a bowl and sprinkle with paprika and the remaining chives. Brush the steaks with oil and grill them on a barbecue or in a grill pan for 3-4 minutes on each side. At the end of the grill, also place the zucchini slices on the grill and fry. Arrange the zucchini on plates and season with salt and pepper.
