Filet steaks au gratin with fried onions and cheese crust

Ingredients

Servings: 4
  • 800 g Potatoes
  • 1 kg green asparagus
  • 4 TABLESPOONS Sunflower oil
  • 7-10 Tbsp coarse salt
  • 7-10 Tbsp Pepper
  • 2 Onions
  • 80 g Old Amsterdam cheese
  • 1 TABLESPOON Fresh cream
  • 4 Beef fillet steaks (approx. 160 g each)
  • 7-10 Tbsp Salt
  • 60 g clarified butter
  • 2 Branches of rosemary
  • 1/4 collar Thyme
  • 1 TABLESPOON Flour
  • 1 TEASPOON Sweet peppers

Directions

    Wash the potatoes and cook in plenty of boiling water for about 20 minutes. Wash the asparagus, cut off the woody ends and cut the stalks into three. Sprinkle with 2 tablespoons of oil, season with coarse salt and pepper.

    Peel onions and cut them into rings. Grate cheese coarsely and mix with crème fraîche. Dab meat dry and season with salt and pepper.

    Drain the potatoes, rinse with cold water, peel and slice. Heat 40 g clarified butter in a pan and fry the potatoes for about 20 minutes while turning them until crispy. Wash rosemary and thyme, shake dry, remove needles from the twigs and leaves from the stalks and chop.

    Season the fried potatoes with salt and herbs.

    Meanwhile, spread the asparagus on a baking tray and cook in the preheated oven (electric cooker: 225 °C/ circulating air: 200 °C/ gas: see manufacturer) for approx. 15 minutes. Turn once or twice in between.

    Mix flour and paprika powder. Dust onion rings with it. Heat 2 tablespoons of oil in a cast-iron pan. Fry the onions for about 5 minutes while turning. Remove, clean the pan and heat it again strongly.

    Heat 20 g of clarified butter in it and fry the steaks in it for about 3 minutes on each side. Push the asparagus lightly together on the tray. Take the steaks out of the pan and place them next to the asparagus on the baking tray.

    Spread the onions and cheese mixture over the meat, put the tray back in the oven and continue cooking at the same temperature for about 5 minutes. Arrange meat, vegetables and potatoes on plates.
