Ingredients

  • 50 g whole almond kernels (with skin)
  • 1 Egg (Gr. S)
  • 1 Protein (Gr. S)
  • 400 g Marzipan raw mass
  • 50 g Flour
  • 100 g + 40 g icing sugar
  • 2 tablespoons (20 g) Almond slivers
  • 1 TEASPOON condensed milk
  • 1-2 TEASPOONS Lemon juice
  • 1/2 Tube red sugar writing
  • baking paper
  • 1 small freezer bag

Directions

    1.put the almond kernels in a pot and add enough water to cover them all Boil the water briefly. Pour the almonds into a sieve and quench them with cold water. Let them drain and press them out of the brown skin with your fingers. Now cut the kernels "at the seam" lengthwise into halves. Preheat the oven: Electric stove: 150 °C/ convection: 125 °C / gas: level 1

    Break the egg. Put both egg whites in a mixing bowl and the egg yolk in a small bowl. Dice the marzipan. Add the marzipan, flour and 100 g icing sugar to the egg whites. Knead everything into a smooth mass. Divide it into 3 parts. Roll 2 parts to approx. 3 cm thick strands each, cut them into a total of approx. 32 pieces. Form balls (3 cm Ø) with moistened hands

    Press 2 almond halves each as feet, 2 as wings, possibly 1 as tail in each ball. Place them on a tray lined with baking paper. Roll the rest of the mixture into 2 strands (2 cm Ø), cut them into approx. 32 pieces and form balls (2 cm Ø). Put 2 pins in each ball as a beak. Put 1 pin in each of the big balls, put 1 small pin on top of each

    Whisk egg yolk and milk, spread it on the chicks. Bake them for 25-30 minutes and let them cool down. Stir 40 g icing sugar and juice to make a glaze. Pour it into a freezer bag, cut a small corner at the bottom. Spray the chick with it hair combs. Knead the tube of sugar writing, paint the eyes with it. Let everything dry
